Convex Edge
The convex cutting edge on the popular Japanese style hairdressing scissors is designed to give a cleaner sharper cut and allow you to slide cut.
If this edge is destroyed by sharpening on a grinder, it will pull and tear the hair when you try to slide cut. It does not matter how sharp the blade is, a bevel edge simply will not work for slide cutting.
800 Millimeter Radius

The 800 millimeter radius is the slight curve you see in new shears from the hilt to the tip of the blade. This curve adjusts the angle of attack when you are cutting so the hair does not push away from the blades as you cut the hair. Scissors that have been sharpened by water honing have the radius straightened. Now they will push the hair. This is why the first time you get a new pair of scissors sharpened, they cut, but not like they did when they were new.
